Having a creative dairy or non-dairy product today requires more than just presentation, it requires “out of the box” thinking to invent a cutting edge flavor and to stretch the imagination in a standard product category.  Although a beautifully displayed product can be very seductive and still pull in the customer, what about packaged goods and what can be done there for attraction?

Here is a great article published in the September issue of Dairy Foods that clearly describes what is going on in the ice cream, gelato and frozen yogurt market and what the new trends are.  Interesting is more than a soft serve twist and competition is getting fierce, especially when the big guys like Breyers starts playing.  

Flavors are the new thing to hook the customer.  At one time Oreo Cookie was the heart stopper (no pun intended), then chocolate chips were replaced with chunks and ripples turned into a thick variegate.  Now it’s easy to find salted caramel pecan or chocolate bacon and not just in ice cream.  Gelato has always been famous for visual appeal, so now add a flavor more interesting than pistachio and you have a captured and drooling audience.
